T.J’S Soft And Chewy Chocolate Chip Cookies

Yes, I know there are thousands of chocolate chip cookie recipes out there. But , my nephew loves the soft and chewy kind.I tried a bunch of recipes out , everything from shortening, corn syrup and vanilla pudding among some of the ingredients.He and I never really love any of then. So, I put my culinary skills to the test. After a few months , I came up with this recipe and we love it. I hope you do too.

2 1/4 cups of cake flour {cake flour make the cookie soft}
2 cups of brown sugar {brown sugar makes the cookie tender}
2 cups of butter {full fat}
1 Tablespoon of vanilla extract or butter extract
2 large eggs 
1 teaspoon of salt
1 1/2 baking power 
1 package of chocolate chips 
1 tablespoon of milk

Pre-heat oven at 375

Cream together butter, brown sugar and vanilla extract. Mix together well until creamy. Add one egg at a time. Stir in flour, salt and baking powder. Mix until dough stiffens a little. Mix chips a little at a time. Chill for an hour.{cold dough spreads slowly giving the cookie time to rise} Shape into smalls balls {or use small ice cream scooper} place on cookie sheet. Bake until golden around the edges, but soft in the middle.{slightly under baked}
Small cookies bake 9-12 mins
Large cookies 10-15 mins.
