Whoopie Pies

                                           

Whoopie pies with  powdered sugar frosting drizzled on top

Cake


2 cups of cake flour
1/2 cocoa powder
1 1/4 teaspoons of baking soda
1 cup of buttermilk
1 teaspoon of vanilla extract
1 stick of butter softened 
1 teaspoon of salt 
1 cup of brown sugar
1 large egg
Filling
1 stick of butter
1 1/4 cups of confectioner sugar
2 cups of marshmallow cream
1 teaspoon of vanilla extract
Marshmallow Fluff
Unsweetened cocoa

Pre heat oven at 350
Whisk together flour, cocoa, baking soda and salt in a bowl until combined. Stir together butter, milk and vanilla in a small bowl. Beat together butter and brown sugar in large bowl, beat until pale and fluffy.Then add egg beating until combined well. Alternately mix in flour mixture and buttermilk in batches, beginning and ending ending with flour, mixing until smooth.
Spoon 1/4 cup mounds of batter about 2 inches apart onto parchment paper. Bake in upper and lower thirds of the oven, switching position of sheet pan halfway through baking, until tops are puffed and cakes spring back when touched.
Bake 11- 13 mins. Transfer to cooling rack.
Filling
Beat together butter, confectioners sugar, marshmallow cream and vanilla in a bowl . Mix until smooth, spread a tablespoon of filling on flat side of half of cake and top with remaining cake.
