Lemon cookies are a classic treat. So one sunday  afternoon, I want to try something a little different.
Sometimes when I’m in the kitchen whipping something up , I don’t really write things down. When I was finish my sister loved the cookies and ask me to make them for a party she was having. I panic a little. {o.k a lot.} It took me a day to get all measurements of the ingredients together. It’s a real simple recipe but if you don’t have right measurement of the ingredients its not going to come out right. Enjoy!

Cookie Batter

1 large egg

1 1/2 cup of sugar
2 cups of cake flour
1 1/2 cup of butter softened
1/2 cup of fresh lemon juice
2 tablespoons of lemon zest
1 teaspoon of baking powder
1 teaspoon of baking soda
Pre heat oven at 325
In a bowl mix butter and 1 1/2 cup of sugar until cream together.Add in egg and 3tablespoon of lemon juice.
Stir in flour,baking powder,baking soda and 2 tablespoon of lemon zest. chill batter for 30 mins.
Drop spoonful of batter onto cookie sheet. Bake for 9-11 mins. remove from oven and cool.
Lemon Drizzle
2 cups of powder sugar
1/3 cup of lemon juice
1 tablespoons of lemon zest
In small bowl with powder sugar, pour in lemon juice a little at a time.Add in lemon zest stir and let sit for a few minutes. When cookies are cool drizzle lemon icing over cookies.  Enjoy !
