Shortcakes with pineapple brown sugar glaze

This kinda of feels like a summer treat, but its still warm in N.Y.C. And I love shortcakes. I made this recipe a couple of weeks ago.


1 1/2 cup of flour
1 1/2 teaspoon of baking soda
2 eggs
2/3 cup of sugar
3/4 cup of butter melted
2 teaspoon of vanilla extract
1/2 cup of milk
Pre heat oven at 350

Whisk flour and baking powder, set aside. In large bowl beat the eggs and sugar about 2 mins until fluffy. Gradually pour in the butter and vanilla while mixing. Add half the dry ingredients slowly, and stir until just combined. Last add the rest of the dry ingredients, don’t over mix. Spoon batter into greased cupcake tins or cupcake liners. Bake for 20-25 mins. {poke with toothpick to make sure it’s clean} Let cool. I used a shortcake pan, if you do not have a shortcake pan read the following steps: When the cakes have cooled  use a sharp knife to cut a cone shape hole down into the cupcake removing the center. Don’t cut to the bottom of the cake.

 Pineapple Glaze

1/4 cup of brown sugar
3-4 tablespoon of butter
1/2 teaspoon of cinnamon
1 1/2 pineapple chunks
In small pot on med. heat  combine butter, sugar and cinnamon. Heat until brown sugar has melted in the butter. Stir in  pineapples heat for 1-2 mins. {pineapples should be lightly glazed} Spoon pineapples and glaze into cakes. Enjoy.
