Cinnamon crumble muffins with drops of caramel

Sunday night dessert:Cinnamon crumble muffins

O.k , so this is not exactly a evening dessert . Maybe a snack ? For me I eat them anytime of the day or night, Time has no meaning when it comes to something delicious.

Ingredients 

1 cup of sugar
1 cup of brown sugar
4 cups of flour
2 teaspoon of baking soda
1 teaspoon of salt
1 tablespoon of cinnamon
4 eggs
2 cups of buttermilk
1 stick of butter
5 caramel candy melted

Crumble topping
2 tablespoon of melted butter
1 teaspoon of cinnamon
2/3 cup of brown sugar
1/2 cup of flour

Crumble- In a bowl combine all ingredients and mix gently with fork to make large crumbs.

Heat your oven to 400 F (200 C), and either grease a muffin tin, or line it with muffin cups.
In a large bowl, mix together the dry ingredients, then stir in the apples. In a separate bowl, whisk the eggs, buttermilk, and melted butter together. Gently add the wet mix to the dry, stir together until just combined, be careful to not over-mix.  Spoon the mixture into the muffin tins, filling about 3/4 full, then top each muffin with the crumble topping. Bake in the oven until a toothpick test comes out clean (for large muffins about 30 – 35 minutes, regular sized, about 16 – 20 minutes). Allow the muffins to cool slightly before removing them from the tin, then place them on a wire rack to cool completely.
