Lemon Citron cake slices with vanilla glaze
I like to call this a cocktail side dish dessert. I actually came up with this idea at a friends house, while drinking Lemon Citron.{ For some reason I get the munchies when I drink.}  I couldn’t find cake pan in  the kitchen, so we used a pie pan. And added some Citron in the mix. Tipsy or sober it’s very moist and delicious.
{I used a small pie pan for the pictures}
Turn face side down and slice
1 1/2 cups of butter softened
1 cups of sugar
3 tablespoons of Lemon Citron vodka
1 tablespoon of baking powder
1 tablespoon of vanilla extract
3 eggs
1 1/4 cup of flour
1/2 cup of lemon juice
some lemon zest
Vanilla glaze
1 tablespoon of vanilla extract
1 cup of powder sugar
2 tablespoons of milk
Preheat oven at 350 .And set aside. In a bowl combine salt, flour and baking powder and blend together. In another bowl, mix together eggs and vanilla and set aside. In a third bowl, Cream together sugar ,butter until you get a mousse like mixture. Slowly pour in the eggs and vanilla mixture until well blended.
Slowly fold in dry ingredients. Once it’s well mix together then add lemon juice, zest, and the citron. Then pour in lightly  9×13 pan. {you will might have extra batter. You can save and used in a smaller pan} Bake for 29-39 mins. Let cool. And make vanilla glaze.  Once cake has cool, turn it so the top is down and start slicing. Drizzle glaze over it and you are finish. Then start doing some lemon shots to go with your cake slices. Of coarse that optional but fun.
