Luscious Lemon cake

I every time I make this cake it reminds me of when I was a little girl in the kitchen with my grandma.  She put her soul into anything she would make. Me being kid,wanted to rush to make the cake so I could lick the spoon or the bowl. {and dive into the cake} So, now as adult I follow in her footsteps when 
making anything especially with this recipe.


1 1/2 cups of butter softened
1 1/4 cups of sugar
1 tablespoon of baking powder
1 tablespoon of lemon extract 
3 eggs
1 1/4 cup of flour
1/2 cup of lemon juice
1 package of lemon pudding {follow package directions}
3/4 cup of milk

Vanilla  frosting

1 cup of butter soft
2 cups of powdered sugar
2/3 cup of milk
1 tablespoon of vanilla extract

Beat butter until creamy. Add sugar gradually, then milk. Beating at low speed  until blended after each addition. Add vanilla and chopped 

Preheat oven at 375. Pan sizes- sheet pan or bundt pan

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg  one at a time, then stir in the extract and lemon juice. Beat in the flour mixture and pudding package and 3/4 milk.
Pour batter into prepared pan. Bake in the preheated oven for 40-55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cake cool. Then frost cake. I just sprinkle some lemon cookie crumbs over the top.
