Homemade Ring Dings

Since, I can’t find  My favorite snack cakes Ring Dings any more, I found  this recipe as a
temporary replacement. I have childhood memories of my mother packing my lunch  for school
and she would Ring Dings in my lunch box. This is when they came in the foil wrapping.

1 box of Ghirardelli ultimate chocolate cake mix {follow box for directions }

Sift cake mix to remove chocolate chips. Combine cake mix, water, eggs and oil in a mixing bowl, scraping the sides. Scale the batter into greased or paper 1/2 sheet pan. Bake until the center of the cake springs back to the touch (approximately 25 minutes). Un-mold cake and rack cool.

Cut out 3″x3″ rounds of cake and pipe approximately 1 oz the center. Place cakes on a wire rack and glaze with chocolate ganache. Chill the cakes until the ganache is firm. 

Chocolate ganache
2 cups of semi-sweet chocolate chips
1 tablespoon of vanilla extract
1 cup of heavy cream

Place the heavy cream and vanilla in a sauce pan and bring to a boil. Pour over chocolate and gently whisk to incorporate. Cool to room temperature. 

1/2 cup of milk
2 tablespoon of flour
1/2 of vegetable shortening
1/2 cup of sugar
1/2 teaspoon of vanilla extract
1/2 cup of powdered sugar

In a mixing bowl , cream together shortening and sugar for about 5 mins. Add milk, and  flour, then beat until nice and fluffy . Be sure to scrape your bowl . Whip until sugar has dissolved . Next add powdered sugar and vanilla and whip well. Once cake are cooled , place in frosting bag with a star tip and press the tip down
into middle of each cake, about 3/4 of an inch deep. Squeeze  the bag enough to cause the top of the cupcake to rise, but not enough that it well crack. Lift the tip and repeat with each cake.
