Cookie Friday: Chocolate Amaretto covered shortbread cookies

Happy Cookie Friday !  The other day I posted how to make your own cookie cutters. I made an  oval shape cookie cutter and used it to make these wonderful , chocolate amaretto covered shortbread cookies. I love the yummy taste of the buttery shortbread cookie, covered with the chocolate with a touch of the amaretto liqueur flavor . Delightful !!!


Cookie Friday: Chocolate Amaretto Covered Shortbread Cookies











  • 4 cups of  flour
  • 1 cup powdered sugar
  • 2 cups butter, softened (4 sticks)
  • 1/4 teaspoon salt
  • 2 – 1/2 tablespoons Amaretto  {liqueur}
  • 1/2 tsp. vanilla extract
  • 2 cups of melted chocolate
  • 1/2 cup of melted white chocolate
  • 1/2 tsp. vanilla extract


1.Preheat the oven to 350

2.Mix  flour, salt ,sugar, butter and vanilla extract with your fingers until the dough is smooth and holds together. Roll out and using a oval cookie cutter, cut dough and place on cookie sheet with  parchment paper. Bake for 10-15 mins or until edges are lightly brown. Take out and cool.

3.In small microwavable bowl, microwave chocolate chips and  uncovered on High 1 to 1 1/2 mins or until melted. Add 2 tablespoons Amaretto liqueur and  stir until smooth. Dip each cookie into melted chocolate. Place on waxed paper until chocolate is set.

4.In another small microwave bowl, microwave white chips uncovered on high for 45 to 1 min. or until melted. Then drizzle in a back and forth motion, and let set before serving.

Cookie Friday: Deep-Dish Oreo chocolate creme 

Stuffed Chocolate

PREP TIME: 15 mins

TOTAL TIME: 35 mins

BAKE TIME: 18-20 mins


1 pkg. Oreo cookies

10 oz bag chocolate chips

3 1/2 cups flour

1 tablespoon pure vanilla extract

3/4 cup packed light brown sugar

1 cup granulated sugar

2 large eggs

2 sticks (1 cup) softened butter

1 teaspoon baking soda

1 teaspoon salt



1. Preheat oven to 350 degrees.  Cream butter and sugars together with a mixer until well combined.  Beat in eggs and vanilla.

2. In a greased 12- cavity whoopie pie pan. add  1½ tablespoons of the cookie dough to the bottom. Add a oreo into the middle and cover with another tablespoon of dough. Bake for 18-20 minutes. Do not over bake. Let cool for a few mins. before serving.

Bake:8-10 mins

Makes About: 25-30 cookies


2 cups of semi-sweet chocolate pieces

4 oz. of bittersweet chocolate, chopped

2 oz. of unsweetened chocolate, chopped

1/2 cup organic granulated sugar

2 tablespoons of butter

2 eggs

1/4 cup rice flour

1 teaspoon vanilla

1/4 teaspoon aluminum-free baking powder


1.Preheat oven to 350 degrees. Spray cookie sheet with cooking oil.

2.In a medium saucepan, melt 1 cup of the semi-sweet chocolate chips, the 2 oz. of unsweetened chocolate, and the 2 tablespoons of salted butter. Remove from heat; add the eggs, sugar, rice flour, vanilla, and baking powder. Beat until combined, scraping sides of the pan. Stir in bittersweet chocolate pieces, the rest of the chocolate chips. Chill for 50 mins.

3.Drop about a teaspoonful of cookie dough on the greased cookie sheet about 2 inches apart. Bake in the 350 degree oven for 8-10 minutes . Transfer to a wire rack and let cool.

Today’s menu is  Chocolate snowballs.  A wonderful holiday cookie recipe. There’s so many versions  of the snowball cookie. walnut, pecan, chocolate chip, chocolate. Some people use shredded coconut instead of powdered sugar . This is a very kid-friendly recipe. My little ones  love to help me make this recipe. They love rolling the cookie in the powdered sugar. Everybody is usually cover in powdered sugar at the end. It’s all good fun . Enjoy !

Cookie Friday: Chocolate snowballs

Prep: 20 mins

Bake: 10-12 mins

Makes 36 serving 


1/2 cup of baking cocoa
2 cups of flour
1/4 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of baking powder
1 teaspoon of vanilla extract
3/4 cup of butter
3/4 cup of brown sugar
1/4 cup of milk
1 egg
powdered sugar


1.In a large bowl, cream butter and brown sugar until light and fluffy. Add the egg, milk and vanilla; mix well. Combine the flour, cocoa, baking powder, salt and baking soda; gradually add to creamed mixture.

2.Cover and refrigerate overnight.

3.Shape into 1-in. balls; place 2 in. apart on un-greased baking sheets.

4.Bake at 350° for 7-8 minutes or until tops are crackled. Remove to wire racks to cool completely.
Roll in confectioners’ sugar.

Chocolate fudge cookie bars with Biscoff drizzle and a pretzel crust

 Chocolate fudge cookie

3/4 cup of cubed butter

1 oz of unsweetened chocolate

3/4 cup of brown sugar

1 egg

1 cup of flour

1 teaspoon of vanilla extract

1 teaspoon  of baking powder

a dash of salt

Fudge sauce


  Pretzel crust 

1- 1/2  cup pretzel crumbs

3/4 cup margarine, softened

2 tablespoon of brown sugar

 Biscoff drizzle  

1/2 cup of biscoff spread

Fudge sauce { store brought}


  1. Preheat oven to 350 degrees. In a medium bowl, mix together margarine, sugar and pretzels. Press the mixture into a 9×11 inch square baking pan.  Bake in oven for 10 minutes
  2. In a microwave-safe bowl, melt butter and chocolate; stir until smooth. Stir in brown sugar until dissolved. Cool to lukewarm. Stir in egg and vanilla. Combine the flour, baking powder and salt; stir into chocolate mixture until blended.
  3. Spread into a greased  square baking pan. Bake at 350° for 22-27 minutes or until a toothpick comes out with moist crumbs. Cool on a wire rack.  Pour fudge { a little or a lot, it depends on your chocolate craving  on that day} and  let  it set for a few mins.
  4. In a microwave safe  cup, heat biscoff spread for 20-25 seconds. Then using a spoon or plastic zip lock . {Plastic bag : pour in biscoff spread, squeeze to the bottom corner of the bag . Make a small cut at the tip of the bag and drizzle , using a back and forth method .}  Drizzle over frosted fudge bars and serve.

Do you love those chocolate chip bagels from Dunkin donuts or Panera ? Yea, me too. It can be pretty pricey if you have them on a daily or semi daily base. So why not make them at home ? Start off with a basic bagel recipe, and mini chocolate chips. Along with regular bread ingredients and you will have your own version of chocolate chip bagels.


1 1/2 cups of water
2 {1/4 ounce} packages of yeast
1 1/2 ounce of sugar
1/2 ounce salt
1/2  cup of semi-sweet mini chocolate chips
2 quarts of water
1 egg

1.Preheat oven at 350.  Mix yeast, sugar and warm water together and let stand for 3 mins. Mix 1-3/4 cups of flour with salt in a large bowl and add the yeast mixture.

2.Stir until combined and slowly mix in the rest of the flour and mini chocolate chips. Knead dough on a floured hard surface for 5 mins, adding additional flour if more is needed. Dough should be firm.

3.Place dough in a greased bowl and cover and let rise until double.

4.After dough has risen, punch down dough and divide dough into 12 balls. Allow dough to rest for 4 mins.

5.Then bring 2 quarts of water to boil , then with thumb , make a hole in each ball of dough and pull open about 2 inches, making a bagel shape.

6.Place the shaped dough onto a cookie sheet and cover for 10 mins.

7.On lower heat under water for it to be simmering. Drop 2 or 3 at a time into water for about 45 -50 seconds turning once each bagel. Drain and place on greased baking sheet.

8.Brush Tops with beaten egg white. And bake for 35 mins. Turning once for even browning.

9.Bagels done when they are golden brown and shiny.
