White cheddar cheese drop biscuit with spinach White cheddar cheese drop biscuit with spinach I have to say  this is one of my favorite biscuit recipes to make. It’s ready in 20 mins. But, I warn you, the smell from the oven will leave  you drooling, waiting for it to come out. This is a drop method recipe. Adapted from  Bisquick Heart Smart mix. It’s so easy to make . Defrost chopped spinach, then drain and set aside until biscuit batter is ready. Drop on lightly oil cookie sheet, bake for 8-10 mins. Brush melted butter and garlic over slightly hot biscuits and serve warm. Place 2 inch's  apart Place 2 inch’s apart You can see the chopped spinach in the drop batter. YUMMY ! YUMM       Prep time: 10 mins Overall time:20 mins Bake time: 8-10 mins severing 12   Ingredients 2 cups Bisquick Heart Smart® mix 1/2 cup shredded reduced-fat sharp white  Cheddar cheese 1- 1/2 of chopped spinach Frozen { drained } 3/4 cup fat-free (skim) milk 2-3 tablespoons butter or margarine, melt 1/4 teaspoon garlic powder   Directions

  1. Heat oven to 450°F. Spray cookie sheet with cooking spray.
  2. In medium bowl, stir together Bisquick mix and cheese; make well in center of mixture. Drop in chopped defrosted and drain spinach.
  3. Add milk, stirring just until dry ingredients are moistened. Onto cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart.
  4. Bake 8 to 10 minutes or until golden.  Brush  garlic and melted  butter , over warm biscuits; serve immediately.

Light Strawberry cake



A light strawberry cake, waistline- friendly. With Vanilla cool whip frosting. Which is 60 calories per serving. I used ramekins for single serving. You could used cupcake pan or 9 x 11 pan. So good the whole family will enjoy it.




Prep Time: 20 min
  Bake Time: 15-20 mins
  Makes: 6-8 Ramekins
Ingredients

1 white cake mix
1 package of sugar free strawberry gelatin {3 oz.}
4 egg whites
1/3 cup of canola oil
1/2 cup of water 
1 cup of frozen strawberries 
Fresh strawberries for garnish 
1- 10 oz. Cool whip whip frosting vanilla


Directions


  • Spray ramekins with cooking spray. And set aside.
  •  In a large bowl, combine cake mix and gelatin. Add egg whites and oil; beat until well blended.
  • In a small bowl, mash strawberries in their juice. Add water and remaining berries to the batter; mix well.
  • Pour into ramekins . Bake at 350° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  • In container, simply whip frosting with fork. For ramekins cakes :simply frost with a spoonful on each cake. Place strawberry on top of each cake. 9 x 11 cake : frost cake, slice strawberries or simply place 3 berries in a row spaced apart. And place another 3 in a row spaced apart, and serve.

Strawberry shortcakes

                            

                             Light and Easy Summer Treat

                       
                                                
This is a light and easy summer time treat. No baking.Who wants to turn on the oven ?{ I live in new york city it’s been very, very hot the last couple of weeks.} Plus, it’s very diet friendly.
  
Fresh strawberries
1 package of light cream cheese softened
4 tablespoons of confectioners sugar
1 package of hostess shortcakes { You can find it in the supermarket near the fresh strawberries}
Clean strawberries, dry and set aside. In a bowl place softened cream cheese, stir in 3 tablespoons sugar mix well. Place mixture on the shortcake, smooth out with spoon. Place strawberry { you can place one or two and slice it}
Sprinkle remaining sugar over the shortcake and enjoy .
