Mini peach pie with crumb topping |
Peach pie is definitely comfort food . Comfort food makes people feel a little bit better . It really help my mood the last good couple days. I was really feeling ”blue” lately so I got up and made this recipe. I have to say it really me and my tummy feel better. O.k maybe just my tummy . Sometimes when you get that yummy comfort food in you, it just hits the spot and makes you feel good.
Ingredients
Filling
6 graham cracker mini pie pan
1 1/2 cup of diced peaches
1/4 cup of sugar
1/2 teaspoon of cinnamon
1/2 cup of butter melted
Crumb topping
1/4 cup of flour
1/4 cup of brown sugar
2 tablespoons of butter
Pre heat oven 350
In a pot melt butter on high temp.Stir in peaches, sugar, and cinnamon. Once its starts to bubble simmer it for 5-6 mins. Take a tablespoon of the filling place in mini pie pans.
In small bowl, mix together flour, brown sugar and 2 tablespoons of butter. Using pastry cutter or knife cut until mixture is crumbly smooth. Sprinkle onto mini pies.
Bake for 10-14 mins.
