Ice cream sandwiches

This is a super fab recipe to make for the 4th. And you don’t need a ice cream maker for this recipe. Every one is going to it. And 
who doesn’t want a ice cream sandwich ? 

Ingredients 


Directions

  • In a small saucepan, combine the sugar, cornstarch and butter; stir in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in vanilla. Cool completely. Stir in condensed milk.
  • In a large bowl, beat cream until stiff peaks form; fold into milk mixture. Divide between two freezer containers. Stir melted chocolate into one container until well blended. Cover and freeze both mixtures for 6 hours or until firm.
  • To assemble, place 1/3 cup of ice cream on the bottom of a cookie. Top with another cookie; press down gently. If desired, roll sides of ice cream sandwich in chocolate chips, jimmies, peanuts or coconut. Wrap in plastic wrap. Repeat. Freeze until serving.

Carrot cake cookie sandwiches

Happy cookie Friday cookie lovers ! Today I what you try my carrot cake cookie sandwiches. It’s so delish !  Yummy cream cheese filling, walnuts and white chocolate chunks . Hope you enjoy it.

Ingredients

Carrot cookie dough
1 1/8 cups of flour
1 teaspoon of cinnamon
1/2 teaspoon of baking soda
1 cup of grated carrots 
1 teaspoon of vanilla extract
1 cup of white chocolate chips
1 1/2 cup of sugar
1 egg
1 stick of butter
1/2 cup of brown sugar
1 cup of walnuts chopped


Cream cheese filling
1 cup of cream cheese
1/4 cup of powdered sugar
1/2 teaspoon of vanilla

1. Preheat oven at 350. In a large bowl, whisk together flour, cinnamon, baking soda, and salt.
2.Cream together, butter, sugars and vanilla with mixer. Beat until fluffy, mix in carrots and flour mixture, on low speed until well combined. Add in walnuts and chips.
3.Chill batter 1 hour.
4.In a small bowl, while batter is chilling, blend together, cream cheese, powdered sugar and vanilla until smooth. And set aside.
5.Once batter is chilled, drop 1 1/2 tablespoons of batter on a lightly sprayed cookie sheet 2 inches apart and bake for 11- 17 mins or until golden brown. Take out and cool.
6.Take a spoonful of cream cheese filling and place on flat side of the cookie, place another cookie on top. Repeat and serve when ready.



Brownie chunk cookie sandwiches

Cookie friday: Brownie chunk cookie sandwiches

It’s cookie friday and I can’t wait for everyone to try this recipe. So yummy. Soft and chewy brownie chunk cookies with a delicious chocolate cream cheese filling. I will be eating this tonight while watching the nba playoffs  . 
 You can make the cream as dark or light as you want, by adding more cocoa power. 

Pan: 2 cookie sheet
Preheat oven: 350
Bake: 8-11 mins
Overall time:2 hrs 45 mins.

Chocolate cream cheese filling

Ingredients

Brownie cookies
1 pound of dark or semi-sweet chocolate chopped
4 large eggs
1 1/2 cups of brown sugar
1 teaspoon of vanilla
1/2 teaspoon of salt
4 tablespoon of unsalted butter
1/2 cup of flour shifted
1/2 teaspoon of baking powder
12 ounce bag of semi-sweet chocolate chips



Instructions 

1. In large bowl place over saucepan of simmering water, melt chopped chocolate with the butter, stirring until smooth, about 5-7 mins.

2. In a second large bowl, using mixer, beat the eggs with sugar at med. speed until thick and pale 3-5 mins. Beat in vanilla and salt. Fold in the melted chocolate, then fold in flour and baking powder with rubber spatula. Stir in the chocolate chips. Scrape down sides of the bowl, then cover and freeze for an hour.

3.Preheat the oven and line 2 baking sheet with parchment paper.
Using a med. cookie scoop drop batter on cookie sheets and bake for 8-11 mins don’t over bake. Take out and cool.





Chocolate cream cheese filling
16 oz. of cream cheese softened 
1/2 cup of powder sugar
3 tablespoon  cocoa powder
1 teaspoon of vanilla

1. In a bowl mix cream cheese and powder sugar, blend well.
Add in cocoa powder in at a time, stirring after each  addition .
Then add in vanilla. {You can add in more cocoa powder if you want a darker filling} Chill for 30-60 mins.

After cookies have cool and filling has chilled, it’s time to put the  delicious combos together, just before serving.  Drop 1 or 2 tablespoon of the filling on flat side of the cookie, place another on top and repeat. Enjoy.

      Oatmeal raisin cookie sandwiches With marshmallow fluff filling

      Oatmeal Cookie sandwiches

      Ingredients

      1 cup  unsalted butter, room temperature
      1 cup light or dark brown sugar
      1/3 cup of sugar
      2 eggs
      1 teaspoon of vanilla extract
      1 1/2 cups of all purpose flour
      1 teaspoon of baking powder
      1 teaspoon of salt
      1/2 teaspoon of cinnamon
      3 cups of old fashion rolled oats
      1 cup of raisins


      Filling
      3/4 cup shortening
      3 cups powdered sugar
      7 oz. jar marshmallow fluff
      1-3 Tbs. milk

      In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugars until creamy and smooth (about 2 – 3 minutes). Add the eggs, one at a time, beating after each addition. Beat in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the rolled oats and raisins. For large cookies, use a generous 1/4 cup of batter (I like to use an ice cream scoop) and place six cookies on each baking sheet. Flatten the cookies slightly so they are about 1/2 inch (1.25 cm) thick. Bake the cookies for about 14 –18 minutes rotating the cookie sheets halfway through the
      baking time. The cookies are done when golden brown around the edges but still a little soft in the centers. Remove from oven and let cool.
      Filling:  Cream shortening, sugar and marshmallow creme. Add enough milk as needed to achieve a fluffy consistency. Spread filling on the bottom of half of the cookies; top with remaining cookies.

      Makes about 4 dozen. But it really depends on how big you want them
